My Grandma Fresh Pasta Recipe

One of the essential I started making during this lockdown is my own fresh pasta, with the recipe of my grandma. Being part italian means that we take our pasta and pizza really seriously and there is no comparison between fresh pasta and dried one you find in the shop ( when you can actually find them). It is really easy and you do not need a pasta machine though if you have one so it is quicker!

My grandma fresh pasta recipe: 

  • 500g of all purpose plain flour
  • Half a tsp of salt
  • 3 eggs
  • 1 small glass of water

Pour the flour to a mixing bowl, add the eggs and the salt. use your hand to knead the ingredients into a dough, and add the water to add moisture to the dough.

For 5 to 10 minutes flatten the dough multiple time to make sure it is all combined properly ( the texture should be more or less like the below image), cover it and let it sit for half an hour.

Once it is ready, cut the dough into 4 pieces, and one at a time use a rolling pin to flatten each dough until it is thin enough to – this part is easier if you have a machine but up to about 2 to 3 mm thickness if you doing this by hand. then cut the shape of pasta that you wish my favourite is Tagliatelles ! Let it dry in a dish but add enough flour to the dish so the pasta don’t melt into each other, you can hang the freshly made pasta on a stick if you can. Let them dry for a couple of hours minimum.

I usually then freeze in sandwich bags so I can cook them whenever I am planning to cook pasta and they taste fresh!
