EasyHealthyMeal #2 – Almost a Gazpacho

but more of a really cool Tomato-Basil soup


Hello, Lauren Here today to share with you all one of my favourite easy meal recipe ! a cold tomato soup, you can also eat it warm however, with summer around the corner, such a refreshing starter is a must!

This is really easy to make, and you can have it for a few days, or share it with your friends at a diner party as you will make more than you need for one bowl of soup! 

Ingredients : a sliced onion, 700 gr of on the vine tomatoes (the tastier the tomatoes, the better the soup will be so choose them ripe), one can of chopped tomato,some basil, a teaspoon of sugar and some olive oil.

In a large pan, add a couple tablespoons of olive oil as well as the sliced onion, let them cook until they become brown, then sprinkle the tea spoon of sugar on them to help them caramelised it will help with to reduce the bitterness of the onion and add a sweet taste to the recipe.

Slice the tomatoes, no matter the shape as it will get blended later on, add them to the pan then add the chopped basil, drizzle a little bit of olive oil over the top and let it cook on small heat for 10 to 15 minutes, then add the chopped tomato can to the mix as well as 200 ml of water. You can add more water if you prefer a more watery consistency.

Let it simmer away for a good 20 minutes minimum – this recipe is not difficult but require a little bit of spare time as the heat should not be too high. Bring the mixture to a boil on slow to medium heat, make sure that none of the tomatoes or onion get burnt it would totally ruin the taste of the recipe. When that is cooked, with the help of a hand blender, blend away to the consistency that you prefer, I like my soup semi-smooth with some chunks left in but it is totally up to your taste!

Put it on the side to cool down (not in the fridge until it is totally cold), serve with few basil leaves for a cool presentation and Voilà,
