EasyHealthyMeal #1 – Carrot and Walnuts salad

I’ve switched to eating one veggie based meal a day a couple of years ago and It made me feel a lot better and more energetic in the afternoon. I have decided to share a few of them in a new series called EasyHealthyLunch !

Carrot and Walnuts salad

slice up 3 big carrots with a peeler, add some walnuts broken into smaller pieces, salt and some olive oil. Yumm

I am no dietician and I am not saying you should do follow my diet (just saying’), it is just what works for my lifestyle ! Hope you liked it.
