Today I thought I would share my lazy veggie dinner option for when I want to be healthy but I don’t want to spend my evening in the Kitchen (no one has Time for that). I Hardly eat out anymore as vegetarian options are often disappointing in restaurants and also frankly, my cooking satisfies my cravings.
This dish requires one pot and you can make it yours by adding or removing any of the ingredients you don’t like. Recipes are not set in stone but rather a path to follow to experiment and make something YOU enjoy.
You will need:
– 2 gloves of Garlic
– 1 peeled sweet potatoes (around 500g)
– 1 zucchini
– 1 eggplant
– 250 g of (cherry) tomatoes
– 1 red bell pepper and an orange one for the great taste and present sight
– olive oil, salt and pepper
But you can also add :
– chickpeas or red lentils
– or any veggie that float your boat
in a pot, add olive oil, chop the garlic, cut the tomatoes and peppers in small chuncks. Let it cook for few minutes before adding the chopped up sweet potatoes (which will add the sweetness to the other veggies) add it to the mix, then dice up the zucchini or courgette (however you say it) and the eggplant (and the mushrooms if you decide to add them).
Cover the pot and leave it on small to medium heat for 15 to 20 minutes, mix the veggies until they have reduced. Leave it a little more until all of them get smoothy and it looks like more or less like a ratatouille (now i know real ratatouille is a lot more work and dedication that the dish made in this article but this is MY version of a quick and healthy dish you can mix in with a little bit of rice or pasta – like displayed in the main pictures or some proteins if you want to).This recipe usually lasts me two to three dinners – the photo was taken on the third day hence the ratio pasta/veggie – usually less pasta and more veggies.
